15-ounce can pumpkin
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/2 teaspoon salt
14 ounces eggnog (store-bought or homemade)
2 large eggs
9″ unbaked pie crust (store-bought or your own recipe)
Heavy whipping cream, whipped
Freshly-grated nutmeg, to taste (optional)
Preheat oven to 425 degrees. Blend together well in a small saucepan the pumpkin, spices and salt. Slowly heat the mixture over medium-low heat until warmed through; remove pan from heat and set mixture aside to cool slightly. Transfer the cooled mixture to a medium-sized bowl and add eggnog and eggs. Whisk together well until the mixture is smooth, then carefully it into the pie crust. Bake 15 minutes at 425 degrees; without opening the oven door, reduce temperature to 350 degrees and continue baking 40 minutes more, or until a knife inserted one inch from the crust edge comes out clean. Allow pie to cool completely before serving. TO SERVE: Top each piece of pie with a generous dollop of whipped cream and a light dusting of freshly-ground nutmeg to serve. — Serves 6-8
The 2022 holidays are just around the corner, yes — and this delicious pie would be great to include on your Thanksgiving or Christmas menu — but let’s not rush by things too quickly! Today is the 21st anniversary of that never-to-be-forgotten day of 9-11. How fast those 21 years went by, and yet each of us still remembers in distinct detail exactly where we were or what we were doing on that very, very sad September day for all of America. There is still October to look forward to with its costume parties and trick-or-treat fun that it brings to many — and then the holidays are truly on their way with Thanksgiving, Christmas and New Year’s celebrations, family gatherings, and all the joy of the seasons.
