Asian Cucumber Salad


2 medium cucumbers

2 cloves fresh garlic , finely minced

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sweet chili sauce

1 tablespoon sesame seeds

2 green onions, thinly sliced

Place cucumbers on a cutting board, flatten them slightly with a rolling pin, then cut into small slices; set aside. Combine in a separate bowl the garlic, soy sauce, rice vinegar, and sweet chili sauce. Stir well to combine, then pour the dressing over the cucumbers; toss gently to thoroughly coat. Set aside to marinate for 10 minutes. While cucumbers marinate , quickly toast sesame seeds 1-2 minutes in a non-stick skillet — just until they start to crackle. Sprinkle green onions and sesame seeds over the marinated cucumbers and serve. — Serves 4
